For the people who don't understand Tashawit, we are talking about a type of shawi bread called targhat. Raghda in derdja. Delicious stuff!

J'ai visité le site proposé par Shawi : il est vrai que les recettes présentées
sont faciles à réaliser et donnent l'eau à la bouche. J'ai appris que pour préparer les oignons confits il fallait qu'ils macèrent dans du vinaigre pendant un jour ou deux et même plusieurs jours au réfrigérateur. Il n'est
cependant pas précisé si leur cuisson se fait à part. D'habitude, je les fait revenir (eh! oui, j'adore cuisiner !) dans un mélange huile-beurre puis j'ajoute du vinaigre et les laisse confire à feu doux jusqu'à presque caramélisation. Ils sont servis à part. Quand on vit à l'étranger on recherche la chaleur de nos compatriotes et ...la saveur de notre cuisine. C'est en appelant ma mère au téléphone que j'ai appris à cuisiner, vous voyez bien que " les voyages forment la jeunesse. " Je dois ajouter que la note de la facture téléphonique était beaucoup plus salée que mes recettes!

I live in Glendale. It is in between Pasadena and Burbank. I work 7 days a week. 5 days teaching at Le Cordon Bleu and 2 days doing freelance. I have some time off occassionaly and vacation time. I know other Algerians in the area, they are from different regions in Algeria.

Maybe we can start an Algerian-Association in Southern California? They have one in Northern California and Washington DC. I have been in touch with both of them.

Still not working, dude. I followed the instructions, but it didn't work. I keep getting this error "Enter the letters as they are shown in the image." Which I already did.

Do a test and see if it works.

Other things are not clear. What do you have to do if you want to start a new subject. Also, is there an email to get in touch with the blog dude?

there is also a major amazigh exhibition upcoming at ucla there will be a tuareg delegation honoured.

of course there will be algerian food at these events.

Pain traditionnel aux Aurès
Le nécessaire tajine
Les mères de familles aurésiennes accordent un soin particulier au choix du tajine qui doit répondre à un nombre de critères dont va dépendre la qualité gustative de leur galette. Durant le reste de l’année, cet ustensile est pratiquement abandonné par la plupart de ces femmes, notamment les travailleuses qui recourent aux fours ou aux boulangers des quartiers.

Le Ramadhan demeure, de ce fait, l’exception car la kesra ou el matloue, comme appelée dans d’autres régions, est le mets irremplaçable pour accompagner la sacro-sainte soupe chorba frik. Artisane spécialisée dans la fabrication du tajine, étalant ses produits à même le sol en face de la mosquée El Atik du centre-ville, El Hadja Noua confirme l’engouement exceptionnel pour le tajine pendant le Ramadhan, estimant qu’il reste presque boudé les onze autres mois de l’année. C’est le tajine grenu qui est le plus demandé car idéal pour le cuisson de la Kesra khmira (galette à la levure) particulièrement consommée durant le mois du jeûne. Le prix de cet ustensile varie de 200 à 350 DA selon la qualité de l’argile et de sa fabrication. Certains tajines exigent une terre spéciale que l’artisane doit parcourir des kilomètres pour trouver. Cela explique la variété des prix qui tient également compte du temps et de l’effort mis dans la fabrication. Plusieurs heures sont, en effet, passées par les artisanes dans la seule étape dite tamlis, qui signifie littéralement polissage et au terme de laquelle, le tajine prend une forme finale. Il est ensuite exposé au soleil pour sécher avant d’être mis dans un four pour lui donner de la rigidité. Les graines en forme de cercles concentriques agrémentant le tajine grenu, lui sont données par l’artisane alors que sa pâte est encore molle. Ce sont ces graines qui empreignent la galette et lui donnent son élégance. La poterie, essentiellement pour la confection du tajine, est une activité exclusivement féminine qui est pratiquée dans la région depuis des temps reculés. Des femmes, munies d’un baluchon capable de contenir leurs produits qu’elles calent soigneusement sur leur dos, vont de villages en villes faire le porte-à-porte afin d’écouler la marchandise. D’autres choisissent d’exposer leurs produits sur les axes routiers fréquentés. Fragile et cassable, le tajine d’argile ne compte pas laisser sa place à son concurrent en métal pourtant plus robuste et résistant aux inévitables chocs dans les cuisines. Le secret réside, selon les ménagères, dans le goût et la qualité des galettes qui y sont cuites. Presque tous les ustensiles des ménages aurésiens étaient à base d’argile, il y a quelques décennies. L’introduction des ustensiles en métaux s’est faite progressivement et a fini aujourd’hui par remplacer les anciennes marmites et plats d’argile. Mais les fins gourmets font appel a « ces vieux objets » pour retrouver les saveurs d’antan « balayées », dit-on, « par les métaux durs de la modernité ». Le tajine en ce mois de Ramadhan reste une occasion qui confirme la prééminence de l’art culinaire ancestral, et l’attachement que lui voue encore la population locale.

Qu’en est-il du fameux couffin de Ramadhan ?
Après une semaine de jeûne, les familles démunies et nécessiteuses attendent toujours le fameux couffin de Ramadhan qu’ils auraient dû recevoir, selon M. Ouled Abbès, ministre de l’Emploi et de la Solidarité nationale, au plus tard le premier jour du Ramadhan.
A ce titre, les 900 couffins dont la valeur réelle ne dépasse pas en réalité les quatre cent dinars allouée aux familles pauvres à Khenchela-ville, se trouvent toujours bloquées au niveau de l’APC pour des raisons inconnues. Toutefois, il semble que le nombre de couffins qui est vraiment minime par rapport au nombre de familles démunies, a été réceptionnés par la Ligue et la coordination des quartiers au nombre de 63, elles sont censées prendre en charge l’opération de distribution mais se trouvent face à une problème celui du nombre réduit de couffins à attribuer. Après quelques calculs, la répartition a fait que certaines cités ne bénéficient que de quatre couffins. Idem pour les affaires scolaires qui tardent à venir. Dans ce contexte, qui sont les responsables de cet état de fait ? Une chose est sûre, ce sont les enfants qui en font les frais.
Dans le même contexte, la DAS a été saisie ainsi que la direction des Affaires religieuses, de même que les trois secteurs sanitaires de la wilaya de Khenchela, à savoir Kaïs, Chechar, et Khenchela offrant leurs services aux malades démunis qui seront orientés par les institutions suscitées. A ce jour, et depuis sa mise en activité, cinquante personnes nécessiteuses y ont été traitées gratuitement. Ainsi le facteur majeur qui a toujours contrecarré les malades et leurs familles qui se traduit par le manque de spécialistes au niveau du secteur public associé au contretemps vient d’être éliminé par le secteur privé du moins à Khenchela qui a constamment souffert sur ce plan. Ce qui a ravi toute la population de Khenchela.
